The ruined abbey includes a rare surviving example of a monastic latrine.  Muchelney Abbey is set in beautiful surroundings off the beaten track in the Somerset Levels. It’s a fascinating place to visit. The buildings were constructed between the seventh and 16th centuries. The site is made up of the abbott’s house, the monastic ruins, and a communal latrine called a reredorter. This medieval bathroom is a curious sight to see, as it’s a rare surviving example of such a structure. You can enter the two-story building, and even go upstairs to see the layout of the former toilets and glimpse down at the sewer system lying below. The abbott’s house has quite a few rooms to be explored, as well. There’s the Cloister Walk, with its display of stonework; the kitchen, with its pitched roof; and the cheese room, with its beautiful fireplace. You can even venture up the great staircase—if you can negotiate your way up the very worn and uneven structure. The foundations of the abbey are all that are left after Henry VIII’s dissolution of the abbeys in 1538. My family loves this dish! Cattle Drive Casserole. Now that’s a name for a meal. Regardless of whether you’ve been on one, the point of this stuffed-to-the-brim dish is that it could fuel you up and keep you full during a cattle drive, were you to go on one. And that’s just fine with us! Along with ground beef, tomatoes, chiles, bell pepper and onion, this recipe’s got one unexpected ingredient…bisquick! A three- layered cheesy spinach bake with the perfect crispy breadcrumb topping. You will be salivating over this one. This recipe came from a dish I made for my mom after she had knee replacement surgery. She was low on iron and I had just learned spinach was a great source of iron, but she hated spinach. How could I make spinach taste good? Garlic, cheese, and more cheese. This Italian spinach bake is just that with a crunchy breadcrumb layer on top. I love the idea of this as a creamed spinach vibe, but instead of cream use ricotta and eggs. Cream is so hard on the gut sometimes. This dish will turn any spinach hater into a lover, take it from me. Layered with grated mozzarella, caramelized onions, good Parmigiano Reggiano, and the best garlic sourdough bread crisps that add a crunch to every bite. Try this one for sure.
